Chocolate Chip Cookies

I wanted to make my favorite fall treat: Pumpkin Spice Chocolate Chip Cookies. I could not find pumpkin puree anywhere. I learned from a Foodmaster employee that it will not be present on the shelves of any grocery store anytime soon. While normally there is a surplus keeping shelves full throughout the year, all the rain we experienced last summer caused severe damage to the Pumpkin crops leaving no puree whatsoever in excess. I had no idea it was that bad! So, I kept it simple and made these chocolate chip cookies
Ingredients:
2.5 cups all purpose flour
1 teaspoon baking soda
1 teaspoon sea salt
1 teaspoon vanilla extract
2 cups packed dark brown sugar
2 eggs
2 sticks butter, softened. If Jenna says 2 sticks, she means 2 sticks!
1 bag semi-sweet chocolate chips

1) Whisk together the flour, baking soda and salt. Set aside.
2) Cream together the butter and sugar. Add the eggs one at a time, beating after each one. Add the vanilla and mix gently to combine.3) Add the flour to the butter and mix. Carefully stir in the chocolate chips. Bake at 350 degrees for about twelve minutes or until golden.
I got mini chocolate chips by accident. I made monster size cookies by choice.
This makes me laugh. They are HUGE.
What is happening?!? So good though :)

  1. I love how you drink beer while baking! Ha ha. So excited to go to King Arthur with you this weekend. I think those cookies look beautiful. I am devastated that there is another pumpkin shortage... the same thing happened last year. :(

  2. OMG this is the cutest post! I love everything pumpkin and there was a shortage last year too so I ordered a case (like 24 cans) online. It worked out beautifully. I feel as if our car up to VT is going to be a well-snacked one!

  3. Mmmm...I remember those pumpkin chocolate chip cookies. I think you made them for Lisa's birthday but somehow I ended up with all of them! And I really enjoyed them :)

  5. Whoa, those look yummy! You can totally use bread flour for baking cookies. On the other hand, all purpose flour doesn't work very well for baking bread, so keep that in mind if you're ever making a loaf :)

    Gretchen - oh yea those be the cookies. I took them "out" thinking ahead they might be nice to have on hand for the rest of Lisa's celebrations. Well they made it as far out as your apartment. hahaha oops.

  10. Good job baking! I haven't made cookies in a long time and I think that might be my project this weekend. I like how your milk glass is a Baileys glass (those things don't escape my alchoholic eye) ;)

  13. I haven't tried Blue Moon's pumpkin ale! I like Shipyard and I tried Sam Adams recently. It's nice to enjoy 1 but normally after that it's too much for me.

  15. mmmmm pumpkin cookies. mmmmmm pumpkin beer. ALL stores have been sold out of the canned pumpkin so I really couldn't have been happier when Matt walked in yesterday with about 6 cans of it. Although now I feel bad because I had no idea WHY the shelves were lacking.

    Were your cookies doughy? I think it is funny that you had bread flour :)
