Here we have extra wide spaghetti noodles coated in a classic Thai peanut sauce. The spicy sweet noodles are paired with coconut chicken (cubed chicken breast simmered in unsweetened coconut milk) and sauteed broccoli, edamame and red and yellow peppers. It is certainly my own version of Thai inspired cuisine prepared with the veggies I had on hand. A Taste of Thai spice packets aren't a bad shortcut, but I definitely wouldn't mind making my own spice blend or sauce next time!
I had a similar experience with a complimentary packet of soy-ginger seasoning mix. It was a nice shortcut but I think I'll try to make it on my own next time!
