easy weeknight meal

Here we have extra wide spaghetti noodles coated in a classic Thai peanut sauce. The spicy sweet noodles are paired with coconut chicken (cubed chicken breast simmered in unsweetened coconut milk) and sauteed broccoli, edamame and red and yellow peppers. It's certainly my own version of Thai inspired cuisine prepared with the veggies I had on hand. A Taste of Thai spice packets aren't a bad shortcut, but I definitely wouldn't mind making my own spice blend or sauce next time!

I had a similar experience with a complimentary packet of soy-ginger seasoning mix. It was a nice shortcut but I think I'll try to make it on my own next time!

Thai noodles with coconut-peanut sauce is probably one of my all-time favorite meals. I need to keep coconut milk on hand more often

I do love Thai fool. When I lived in Brooklyn, I would eat it at least once a week.

I've tried that brand, but prefer making my own sauce. Love easy meals though!
